BROWN RICE PICNIC RECIPE
Brown Rice Picnic Salad (This recipe is not suitable to microwave)
.INGREDIENTS
3 cups brown rice (cooked)
130g (3/4 cup) chopped raisins or sultanas
2 teaspoons dark rum (optional)
2 teaspoons dark soya sauce (you can use sweet soy if you prefer)
1 & 1/2 tablespoons olive oil
2 teaspoons ground cinnamon
1 orange, juiced and rind grated
1 tablespoon lemon juice
1 tablespoon honey
1 red capsicum, chopped
1 green capsicum, chopped
1/4 cup chopped parsley

METHOD
If cooking fresh rice it is a great time saving idea to prepare this a day in advance, it seems to add to the flavour makes things easier on the day of the picnic or party. In a separate dish combine raisins, rum, soya sauce, oil, cinnamon, 1 tablespoon orange rind, 2 tablespoons orange juice, lemon juice and honey, stand while rice is cooking.
Once cooked allow the rice to cool for 10-15 minutes before adding the other ingredients.
Once combined cover and store in the refrigerator.
Combine rice, add the raisin mixture to serving bowl, stir in capsicum and parsley. Refrigerate covered, until serving time.
